Fresh Strawberry Cake Recipe: A Sweet Treat That’s Easy to Make
Hi Besties, I truly believe that there’s nothing more heartwarming than a homemade sweet treat. So today I’m sharing my never-fail Fresh Strawberry Cake recipe, which is an absolute show stopper dotted with bright, juicy berries! It’s perfect for Valentine’s Day, Mother’s Day, or anytime you want to make something truly special.
I have this recipe on repeat during Strawberry season here in Florida because I tend to get buy one get one free or buy one get two free offers on strawberries during the peak of the season. So this is a tried and true recipe that doesn’t require butter, and all the other ingredients are staples in my pantry.

Fresh Strawberry Cake Recipe
This will yield a 9″ cake (about 10  slices) and will take 2 hours from start to first slice finish.
Ingredients
Cake
- 2 large eggs, room temperature
- 1  cup granulated sugar
- 1  cup sour cream OR Greek yogurt (I use Chobani)
- ½  cup olive oil
- 1  tsp vanilla extract
- 2  cups all‑purpose flour (measure properly)
- 2  tsp baking powder
- ¼  tsp salt
- 16 oz fresh strawberries, hulled (10  oz diced, 6 oz halved for topping)
- powdered sugar (optional, for dusting)
Strawberry Sauce
- 16  oz fresh strawberries, hulled and halved
- ¼  cup granulated sugar (adjust to taste)
Instructions
1. Prep & Preheat
- Butter a 9″ springform pan, and then line the bottom with parchment.
- Preheat oven to 375°F (190°C).

2. Mix Wet & Sugar
- In a large bowl, beat 2 eggs and 1 cup sugar until pale and fluffy.
- Add 1 cup yogurt, ½ cup olive oil, and 1 tsp vanilla; mix until just combined.
3. Combine Dry Ingredients
- In a separate bowl, whisk 2 cups of flour, 2 tsp of baking powder, and ¼ tsp salt.
4. Incorporate Wet and Dry Ingredients
- Slowly start adding dry ingredients to the wet ingredients. I recommend adding a third of the dry ingredients at a time, stirring until just combined (don’t overmix, and yes, the batter will be thick).
5. Layer Strawberries & Bake
- Pour half the batter into the prepared pan. Sprinkle in 10 oz diced strawberries.
- Top with remaining batter, smoothing gently (remember the batter is thick).
- Then top the batter and lightly press 6 oz halved strawberries (cut side down) into the surface.
- Bake 50–60 minutes (mine was perfect at 55  minutes)—the toothpick should come out clean.
- Let the cake rest 15–20 minutes in the pan. Run a spatula around the edges, release the pan ring, and transfer to a cake stand.
6. Make Strawberry Sauce
While the cake is baking, blend 16 oz strawberries with ¼ cup sugar (or to taste) until smooth. Drizzle over individual slices when serving. I highly recommend not skipping the sauce!
